Stevia refers to the natural sweetener derived from the leaves of the plant Stevia rebaudiana. The sweetness of Stevia comes from the glycosides present: stevioside and rebaudioside. It is stable under high heat and pH changes. Stevia is zero calories, and is used as a sugar substitute in soft drink beverages, baked goods, dairy products, pharmaceuticals (such as syrups and chewable vitamins), and as a tabletop sweetener.
