Allulose is a rare monosaccharide sugar that is classified as a low-calorie sweetener. Allulose is about 70% of the sweetness of sucrose. It occurs naturally in fruits like figs and raisins in very small amounts. Allulose participates in the Maillard reaction, which makes it useful in baked goods for caramelization.
